iPhone 15 Pro Max picture quality changed to worse by itself after editing

I took the picture with iPhone 15 Pro Max with the main camera 1X. The picture shows up nice and bright on the phone. When I added a text on the picture, the picture quality changed by itself to blurry and dark. I tried to do adjustments and filters to get back to the original quality but all failed. Only thing I can do is to reverse all my changes including removing my text edit then I can get back to the original picture. This is very frustrating! Why the picture quality got changed to worse? Any solution?

No, I’m not taking Raw pics. Just 24mm from main camera with the default setting of 24mm. I have HDR on by default and pic looks good. However when I make any adjustments to the picture then the picture quality and clarity changed to blur and dark. I want to add text to my picture but I don’t want the quality of pic change. Any suggestions as how to fix it?
