Re: "I've had my Mac for a while now and have never been able to sign into iMessages or FaceTime, I "log" in
and seconds after it kicks me out and gos back into the sign in page".
Had that happen to me during use of an earlier MacOS version : Restarting Mac always worked for me then.
Although you have tried many things, we have no idea of what you may or may not have tried.
They may be obvious, yet it is easy to overlook that one necessary thing: Wondering if you have tried:
Restarting your Mac
Checking you have a strong enough wi-fi set up / working:
Signing in (to your Mac) with your Apple ID: Sign in with your Apple ID - Apple Support
Ensuring your camera and microphone are both working ok

Add or remove your phone number in Messages or FaceTime - Apple Support
