Default mail account still in apple mail (not gmail)

I have three email clients on my iphone (15, IOS 17.1.1). The standard Apple Mail (has old email addresses from an older ISP), Gmail (my day to day mail accounts) and Outlook (my work email).


I want Gmail to be the account that mail is created / sent from when using other apps (such as a non mail app that can send mail).


Each of the three apps shows Gmail app as the default mail app. In the apple mail app, one of the accounts in there is listed as the default mail account - which notes that's the address that mail generated outside of mail will send from. The gmail account is not in apple mail app (don't want to duplicate mailboxes).


How do I set a gmail account to be the default email account - without creating in the apple mail app, or deleting the apple mail app?

I’m not creating the message from within a mail app. It is another app which has the ability to send mail. It’s choosing the email address / account that’s in the Apple mail app. (Which isn’t the “default” email account I want it to send as. There doesn’t seem to be any option in the other app to choose a default mail account - it appears to be using the default email account (which isn’t right).
