Hello, is there any chance that I can change the capitalization of the text on the labels? I can do it in regular tables and text, but when it comes to a chart, the option is greyed out.

Ah, I see. That makes the text appear capitalized but the value in the cell is not changed, as you can verify by looking lower left.
You need actual all caps in the table for that to be reflected in the chart.
You can double-click a cell and select the text within it, then from the menu choose Edit > Transformations > Make Upper Case.
If you have a lot to convert then you can consider using the UPPER() function.

I actually need my source cells not to be fully capitalized... So I finally created a hidden column with an UPPER() copy of my source cells. That's the column my pivot table will read. It's working right now, so I guess is a nice workaround.

Capitalize in the table where the chart gets its data. This is from the 'Charting Basics' template at File > New in your menu.

First, select one of the text items by double-clicking on it.
You could also change the source data to achieve the same result.
If, like in your first example, the labels are month names, set their format to Text in the pivot table (or the source table). It might have an adverse effect on the pivot though.
The labels are client names and are formatted as text in both the source table and the pivot table. So even if I type Client X in my source table, it appears as CLIENT X in both tables, but not in the chart.
The first image shows my source table capitalized and formatted as text (Client 1 becomes CLIENT 1).
The second one shows my pivot table (also formatted as text and capitalized) and my chart.
And what about the 13% thing? Instead of numbers I have regular text, which I'd love to capitalize too.
