I subscribed to Paramount+ monthly through Apple subscriptions. I wanted to take advantage of their yearly discount but do not see that as an option. Is there a way to access this discount through Apple subscriptions?

The year plan is only through Paramount+ directly. You'll have to subscribe through them (and cancel the subscription of the same name through Apple).
Once subscribed through Paramount+ directly, you have to use the Paramount+ app on your device (or their web access). That external subscription is not valid for the Apple TV app in-app Channels (although it may connect with the Apple TV app on many Apple devices, for Up Next, Search, etc.).
