Documents and Desktop files in icloud

After my internal hard drive crashed I thought it would be a good idea to store in iCloud. I just found out BackBlaze can't back them up if they are in iCloud. I went to iCloud and unchecked Desktop and Documents but I don't see the folders on my Desktop. Where would they be?

If you don't optimize your files, then everything remains on your Mac and will be backed up. If you optimize, then those files offloaded into icloud only will not back up.

If you turn off Desktop and Documents, those folders stay in icloud (accessible in icloud drive) and new folders are created on your Mac. You can move the contents back to your "new" desktop and "new" documents folders.
