I was told by ATT rep to buy Apple Watch 9 to work with iPhone 8 however, soon learned that iPhone 8 can not be upgraded to ios17 which watch 9 needs. Ugh! $55 shelving fee!
Then I was told by Apple rep to buy Apple Watch 7 to be used with iPhone 8 ios16 so put refurbished series 7 on credit card. However, after continually trying to pair the two, Apple Watch keeps saying iPhone iOS (16.7.2) is out of date. Please help
An iPhone 8 can't be paired with a watch on 10 or above regardless of its model.

The Series 7 units shipped with 8.0 when they first came out, but individual ones may have come with or been updated to 10 or above, in which case they can't be paired with an iPhone 8.

I don’t know what iOS the Apple Watch 7 that was sent to me is even on. The agent assured me it was compatible. What iOS does 7 series run on?

I sort of doubt apple produce watchs and don't add the highest supported WatchOS on them, so this "sales agent" must have access to a stock of older produced models if the "agent" can promise you a compatible with ios16 model.

That’s exactly what I been thinking the last few days.
The biggest issue I have is that I spoke candidly with the agent that was selling me the watch because we initially started with series 9 and I was very clear that the watch we needed to buy MUST be compatible with iPhone 8 ios16.7.2
This series 7 watch was actually chosen by the sales agent to specifically be factory reset series 7. I made the purchase following the link that the agent found and sent to me.
I also am having a problem as to which Apple Watch to choose. I love my iPhone 8+ iOS version 16.7.7
