How to downgrade from iOS 17.11 to 16?

You can't.

Apple designed iPhone updates to work in one direction: forward only. So you can't delete it by downgrading – and you can't delete it by upgrading to something newer (as there is nothing newer yet). You've got to live with the new update, for better or worse.

This new update is telling me my camera is not an apple part, when I got it from Apple!! I absolutely HATE this new update. Doesn’t Apple support see these complaints? You’d think they’d fix THEIR mistakes.

That would be a matter of opinion. Some people like the improvements. And some people are just resistant to changes of any kind.

Prodution level iOS' can't be downgraded. Only betas can.

But you knew that.. that is how it has always been.. :/

No, you can't delete it in favor of an earlier version. Once you've upgraded iOS, there's no going back.
