Start by searching the mailbox/folder by Sender or suitable keyword - and/or combining with a filtered view in the Mail App sidebar:

Next, either tap the Edit button at top-right of the Mail sidebar - or tap with two fingers within the sidebar; simply swipe your finger down (or up) the left-side of the message list to bulk select Mail Messages. Swipe below the bottom edge to rapidly select all the visible email messages.
Once selected, tap the Delete button at the bottom of the sidebar.
Well, that's the limit of currently available options - and many users are neither aware of (or discover) the quick-select swipe gesture.
Perhaps consider that as email deletion from an IMAP or POP3 Trash/Bin mailbox folder is permanent, not having a Select/Delete All button is a safeguard against accidental deletion of an entire mailbox.
Apple invite submissions of constructive comments and feature requests via its Product Feedback portal. If you would like to see other options in a future version of iPadOS, this would be the most appropriate channel through which to make your views known to Apple:
Yes, I have the same question, and would also like the ability to select ALL messages in my unread folder and delete them. Might have to log into Gmail with a web browser. Such as Firefox or chrome. Might have more options there. Apple gives you all these gizmos yet you can't delete your emails.

While that works fine for a few dozen or perhaps a hundred or two emails, it is terribly inefficient to empty an inbox. It has taken me several minutes to delete a few hundred emails. At this rate, I will be at it for a few hours.
