hiking trails on maps app

I noticed that the maps application from Apple have access to data on the course of hiking mountain and forest trails, because walking navigation can lead them. So why can't we see these trails on the map?

Thank you for such an exhaustive answer. Here in Poland, tourist trails are subject to strict legal regulations and are created in cooperation with government institutions. They must be regularly checked and restored, and possible threats or closures of trails are announced on government websites. There are also official data sources on the course of all trails along with all important additional information. So I hope to see the trails in the map application soon.
