Use Quick Start:

You do not need to update the iPhone 8 Plus in order to transfer the data. You can always transfer data from an older operating system to a new one. Just not the other way around.

Back up and erase your phone, then login with your other phone with the same Apple ID

I couldn’t transfer my 11max pro to my new 14. I had to set up the 14 manually.
