I understand that the battery Icon is yellow when in low battery mode. However, until recently, when my battery was fully charged, it would turn back to green. However, now it remains yellow. Why is this? Should I turn off Low Batter Mode or will this allow my battery to go down too low without warning me?

You can turn low battery mode off now. You will still be warned, if low battery mode is turned off when your iPhone reaches 20% and then subsequently 10%, at which point I suggest you turn low battery mode on.
