I can increase the font size of incoming e-mails by clicking <cmd> + "+". When composing emails i can increase the font size (e.g. to 24pt). But this makes the font on the receiving end quite big. The usual 12-14 pt is very hard to read for me on the big screen.
Is there a way to increase just the displayed size in the window when composing emails. <cmd> + "+" increases the actual font size.

Not 100% this will even work for your needs
System Setting >> Accessibility >> Display
Scroll down to near bottom and look for " Text " and " Text Size "
Click on right " Default "
A new windows appears and move the Slider at Top to Increase from Default to something Larger

You can simply temporarily zoom the screen. Check System Settings > Accessibility > Zoom for the options.

What you see locally normally should not affect what is seen at the other end. In order to do that, you have to actually set the font size for each outgoing message manually in the new message pane.
You can test this by sending a huge font message to a friend and asking if it arrives as huge or normal.

But I have done that already. It helped to increase the size of the menu bar, folders and the email overview. Unfortunately it does not affect the displayed and actual size of the font when composing emails.
Any other ideas?

Yes. Did that. But i do not want to increase the font to more than 14 pt. Bigger font settings appear huge on some clients on the recipient's end... And 14 pt is still hard to read in my "compose mail" window.
I still think that the same method as in the reading mode would be helpful. Leave font at 12 pt (pretty standard) and zoom setting of the window like in Excel.
I just tried that with various email accounts and clients. Increasing the font size when composing emails (e.g. 18pt, 24pt) results in huge fonts for the receiving end. Tried macOS mail, icloud webmail, Outlook365 webmail...

I don't understand why change the font in the message itself is behaving differently than setting the font in the general settings. But anyway it's working. In some cases i see in the reply that my original email is much bigger than the reply. But i can surely live with that... GREAT

Apple's idea seems to be that you should be able to control the size and font of what you read, and the same goes for the recipients of your email, so they arrange the controls so that you have to modify every outgoing by hand to impose your font choices on someone else.
Many users dislike this, because they want or need to have recipients always see their emails in the font and size which they or their employer has stipulated, and Apple Mail makes this a lot of extra work. Outlook is a better choice for users with this requirement.

I configured that and it is helpful indeed. But there is a slight disadvantage: font gets bigger, but slightly blurred + I have to zoom in and out...
You're welcome. Yes, if you zoom enough they will seem pixelated. But, it's probably the best compromise.
Yes - using that for now...
made a screenshot of the MS Excel solution. Keep the font size but zoom the window. This way no "pixelation"... :-)
