Forced to update notes after 17.1.1

I updated my iPhone 13 mini to 17.1.1 and can't open my old Notes app. I haven't updated my Notes app since years ago, when they added the formatting features, because I need the older version in order to continue to sync with an old Mac. When I launch the Notes app since updating to 17.1.1, it doesn't launch the app but gives only one option, which is to "Upgrade Notes". Is it possible for me to not update? I clicked around and behind the option to update but it's only giving me the one choice (screenshot included).

Is there a way to force it to use my old Notes program? I know if I click "Upgrade Notes," I'm probably toast.
