Safari and App Store completely wiped from my iPhone 11 Pro after rough iOS 17.1.1 update

I spent all day yesterday trying to update my phone to iOS 17 from iOS 14 due to my phone beginning to glitch out and run slowly, and its the first time I've had trouble updating an iPhone before. I made sure to clear enough storage (it said to clear around 5 gb but I cleared closer to 6 or 7), and despite going through all the beginning phases of loading an update, it gave me an error message and the option to retry or remind me later. so i retried and 30 minutes later had the same result. So i decided to try using my MacBook to update my phone for the first time (which I'm now realizing I probably shouldn't have forced it when my phone was clearly not liking this update already). So when i plugged it in and the "trust this computer" message would pop up, I would click trust on my phone and yet it would say it was denied on my computer. I honestly can't remember how I got past this I'm writing this the day after and it was a stressful, upsetting day for me.. but I eventually got it to connect and I left it to update for about an hour or so while doing other things. I came back to my phone once it said it was done and got a white screen with "swipe up to update". I did, and then entered every password I could think of. My phone passcode, my Apple ID password, and more and none of them unclocked the phone. So I eventually put my phone into recovery mode and plugged it back into my computer and tried to update it again. This eventually worked, but when I unlocked my phone, my wallpaper was gone and replaced with pure black. And all my apps had disappeared, except for a handful of Apple apps (and I do mean a HANDFUL... not all of them). Luckily I'm not too concerned about app data or anything like that, my photos are my main concern and they are all there and intact. But with no app store or access to the internet due to safari also being gone, I can't get my photos off of my phone. My messages app is also completely wiped off my phone. And before I get treated like I don't know how to work phones: no, these apps are not in the app library, or spotlight search. And no, they have not been restricted in content & privacy restrictions. No my phone has never been jailbroken and I've never used any outside methods for tech support on this phone. And I've scoured through my entire settings and any app available to me that might force my phone to open an app I can't see (like messages and safari). If I try to click a contact to message them, it just straight up doesn't do it. Same with any links to Apple sites in settings. I also cannot back up my photos or anything like that because I'm having the same issue as before where my phone wont trust my MacBook despite clicking trust, and it wont go into recovery mode no matter how long i hold the button to reset. I'm already due for a phone upgrade so I'm wondering if its worth the trouble to try and fix this, and if its going to be safe to transfer my data over onto my future phone. I'm really terrified of data loss and even though I can physically still see all my photos, it's not very comforting knowing there is zero way to get them off of there right now. If anyone has any suggestions on how to fix all this mess I would be extremely grateful, thanks! (Edit: I linked my older phone to this post on accident, but this is my iPhone 11 pro, after updating it from iOS 14 to iOS 17)
