Somehow I managed to delete an emoji from my emoji keyboard. I’m missing the one of the head smack. How I can retrieve it?

As users, we don't have the ability to remove a specific emoji from the emoji keyboard. So you couldn't have deleted it. I just don't think there is actually a head smack emoji on the emoji keyboard.
If you don't see the emoji keyboard, make sure that the emoji keyboard is turned on.

Apple gets emoji from The Unicode Consortium. They don't make emoji's themselves. And I just went through the entire list of head emoji's on the Unicode Consortium and there doesn't appear to be a head smack emoji at this time. Which is why you likely don't see it on your emoji keyboard.
I did that. My settings show I have both English (US) and Emoji keyboards. When I select add a keyboard, “Emoji” keyboard is not an option. I have emojis; I am missing just one of them.
