What year model is your iMac?

see > Identify your iMac model - Apple Support

The 2012 and 2013 iMac's can only run up to macOS 10.15 Catalina.

A 2014 iMac is required to run macOS 11 Big Sur.

A 2015 iMac is required to run macOS 12 Monterey.

A 2017 iMac is required to run macOS 13 Ventura.

A 2019 iMac is required to run macOS 14 Sonoma.

It could be that your Mac cannot update further then Catalina because it is too old

Go to apple logo in menu bar>about this Mac and see your Macs name and model number there.

See this list to see what devices can run macOS 11

macOS Big Sur is compatible with these computers - Apple Support

If your computer is not listed on this list, it is too old to run macOS 11 I am afraid
