oldhippie51, Because you are not using a passcode on iWatch Apple Pay will NOT work. You can have the option of not using the cards or Apple pay on watch by simply removing them. On the iPhone Apple Watch app click it. At the top below your name in the Search box type Apple Pay. I will show Wallet & Apple Pay. click it. There you will see Payment Cards on your Watch. You can remove all of them on the watch EXCEPT the Apple Cash. If you have Apple Cash set up on your iPhone it will show also on your iWatch. For that all you can do is Delete you Bank Account Information by clicking on Bank Account and following the steps. Apple Cash will still be there on the iWatch, but it won't work without the bank account information. As you know Wallet & Apple Pay wont work on the watch without a Passcode. (you an do a simple 4 number passcode) If your iPhone is with you and paired to the iWatch under the same AppleID when you initially put on watch and try swipe up on the screen the iPhone will enter your Watch Passcode automatically and will remain unlocked until you take off your iWatch. That feature won't help you in remembering your passcode when you need to enter it manually. Hope that helps a little. Also see this Apple Support Page on payment cards with iPhone & iWatch.
