Converting my PURCHASED MUSIC to mp3 to add to a swimming mp3 player

I purchased a LOT of music in iTunes over the years. I want to convert many of those songs to mp3 so I can add them to an mp3 player I can use when I swim. How can I do this? Has Apple totally blocked my ability to do this with my OWNED MUSIC now?
