If you have MP3s (from Amazon or anywhere else), you can add them to your iTunes library: Import media from a computer to iTunes on PC - Apple Support (SA)
However, per your original question, iTunes cannot sync an OpenSwim device the way it does with an iPod or iPhone, so it does not matter if the MP3s are in your iTunes library or not. Follow the instructions for the device.
Also, check the specs on your headphones. If you have OpenSwim Headphones, it can play AAC:

Purchased files from the iTunes Store are unprotected AAC and would work without conversion.
