Everything was working fine before the update, why this issue of not able to use apple pay came???

Did you already force restart your iPhone after the latest update?

Force restart iPhone - Apple Support

Any error messages given, if you want to use Apple Pay?

If you can't add a card to Apple Wallet to use with Apple Pay - Apple Support
