How can I stop crazy amounts of SPAM ?

Good advice so far, but I've had good luck using spamcop.net, for $15 you can report the spam to them & generally after 2 or 3 reports spamcop will have the spammer shut down, spammers don't like that & will most often remove your name from their lists.

Read Reduce junk mail in Mail on Mac - Apple Support. That's all you can do.

Keep sending them to Junk. The Mail app learns... eventually.
