iOS 17 has crippled my phone. How do I roll back? This is beyond awful

I went to the Genius Bar today and according to the guy there iOS 17 is so full of bloat that it cripples older phones. I NEED my earlier OS back. This thing turned my phone into something so slow it’s barely usable. It’s suddenly worse than a bottom end android phone.
