New OS on Apple Watch - lost a window

Before installing the new OS on Apple watch I had a "control" screen that included: a ringing to my phone to find it; settings to control volume of alerts (on/off); theater mode; etc. That screen was accessed by a swipe up from the bottom (if my memory is correct) but now, swiping from the bottom gets me to another rather useless screen and from the top I get "notifications". I miss/need the "control" screen but I have no idea how to access it. Any help is appreciated.

This button (see picture)

Use Control Center on Apple Watch - Apple Support

DO NOT hold the button, as that brings up Emergency services.

If you have an issue getting the press and release timing just right, adjust this option:

Settings -> Accessibility -> Side Button Click Speed.

I like Slow. My Wife likes Slowest. Changing this option also help with Apple Pay and it double press and release.
