I want to use Apple notes for chronological entries. Is there a way to have the application itself organize entries by date, or do I have to do this myself manually? What if I put a date in the title of the entry?

If you want it work that way, yes, I think you'd need to do it by title. My recommendation would be to use the date as the beginning of the title in this format "yyyymmdd" (e.g. 20231218). Put whatever you like after that. That would force everything to stay in date order.

In Notes on your Mac, go to Settings>Sort Notes By> and select either Date Created or Date Edited.
For anyone else reading this exchange, the last step is to sort by "Titles" in Settings.
