I can't log out on my iphone

previously i deleted my apple id and i forgot to log out of my iphone, and now i can't log out on my iphone

This has most of the times to do with screen time restrictions. Go to settings>screen time>restrictions and make sure that the Switch at allow account changes is turned on.

Then you can try and log out again
