iTunes Backup - "Software On The iPhone Too Old"

Hi Everyone

I had an iPhone 11 Pro that was recently stolen. It was running iOS 17. Luckily, about 24 hours before I had done a backup of the phone to iTunes. I have an iPhone X that I want to use as a replacement for now. It can only update to iOS 16.7.3

When I try install the backup from the previous 11Pro to the X, iTunes tells me that it cannot do it as "the software on iphone too old."

I was wondering if there is any way to potentially work around this? After all, I do not want the latest iOS or even the apps that were on the iPhone I really want to access my pictures and messages (that I have backed up) without having to fork out money for the new phone at short, unbudgeted notice.

Any tips/workarounds would be much appreciated.

Thank you
