Which version of OS are they likely to ship, as I understand Sonoma 14.2 has issues with Adobe Lightroom. Would I be able to 'rewind' to Sonoma 14.0 if it does come with 14.2?

FWIW, an M2 Mac mini originally shipped with Ventura. If it comes with Sonoma installed you may be able to downgrade to Ventura. Just to add, there's no reason to think Sonoma 14.0 would be better than 14.2 for Lightroom.

" rewinding " from Sonoma 14.x to Sonoma 14.0 on Apple Silicon Machines is not suggested.
It would entail some detailed instructions ( which are doable ) to achieve this end result
If Adobe Lightroom is the sole impediment to a meaningful experience on this machine.
You may entertain the idea put forth by @dialabrain
Though, this too will require equally detailed instruction to Downgrade to Ventura
Downgrading Apple Silicon Computers is far more difficult than during the Intel Computer times

Only as an indicator of a Brand New M2 Mac Mini purchased Oct 22, 2023 - originally came installed with Ventura 13.4.
Refurbished model is a question mark what it comes with.
Tes " show some patience " would be needed but not too long now.

Certainly rewinding looks a big No No, so either way, lets hope Apple & Adobe get things sorted soon, and Adobe have suggested a work around.
According to what I have found, all issues with Lightroom in 14.2 are just minor, file import related and already being worked on by Adobe. They have literally a half of their customers on Mac, so I wouldn't worry much.
As for now, you will have to use some workarounds when importing files from device. But I think you will be just fine with latest OS.
Welcome. FWIW, how "difficult" it may be is immaterial. It's either possible or not. However, Sonoma 14.2.1 contains the latest security and other fixes.
