I can't find a version of iTunes that's compatible with my version of Mac OS?
I need iTunes to reset and install iOS for a iPhone that I bought but can't find anything compatible to the Mac OS that my MacBook is running

You cannot install iTunes on a Mac running macOS Catalina or later. The iTunes app for Mac computers was discontinued and replaced when macOS Catalina was released. But the good news is that you don't need iTunes. You can update iOS on iPhones without any computer as described in Update your iPhone or iPad - Apple Support
