The only time I've ever heard of an admin user account changing to a standard user account is after an OS update/upgrade.

I would suggest repeating the process again of a clean install of macOS & restore from backup, but this time immediately create a second macOS admin user account for a backup. Hopefully the issue only affects the main admin user account, so if it occurs again, then you can log into the 2nd admin user account to fix the main user account. I've never heard of anyone mentioning multiple admin user accounts being changed to standard user accounts.

Otherwise, you may have some issue with some third party software (maybe not restore the apps or settings), or maybe your Mac is being managed by a school, business, or employer. Check to see if there are any Profiles in the System Settings.
