Wiping device and restart setup
I inadvertently added my sons iPad to my account. What I really want is to create an account for him. How do I delete my account and create an account for him?

Even without erasing the iPad altogether, you can sign out in Settings (without saving the data from your account), as described here: Sign out of iCloud on your iPhone, iPad, Apple TV, or Mac - Apple Support
Then you can create a new Apple ID for your son, which can be done at https://appleid.apple.com/ and sign in with this account instead.
