Pages for Mac
It seems that no matter how many times I save a document, it doesn't seem to save all prior changes. What am I doing wrong? I'm working too hard to lose my work.

The first manual save that you perform will activate Pages autosave and then as you make changes to the document, those changes will be saved quicker than you can detect. Autosave may have issues with some non-Apple cloud services, so caveat emptor, and if you assume Pages autosaves without that initial manual save, and quit Pages, you irrevocably lose the document content as Pages cleans up its temporary files.
As for revision history (File menu : Revert To : Browse All Versions…) that is based on episodal opening and closing Pages documents and not during a single editing episode.
You should be using Apple's built-in Time Machine backup solution that backs up System and user changes on the hour. I say this, because out of the blue, Pages has a long history of developing unplanned document amnesia and may refuse to open a document that you recently saved. If you cannot open the document, then the preceding revision history is unattainable. With Time Machine, you have the ability to restore a document from previous backups by choosing a prior backup timeframe.
