Apps don't appear in Screen Recording settings OS 10.15.7

I am trying to run OBS on Catalina, and the app does not appear on the list of applications to grant permission for screen recording. I have found several threads on other sites about other apps not appearing on the list. Is there a way to fix this?

Can't give new apps camera permissions I need to allow QuickTime to access the camera and microphone, but the application isn't one of the options in Security & Privacy. The only applications on the list are Chrome and Zoom. My understanding is that these applications requested access to the camera. Is there a way to "force" QuickTime to request access to the camera? If so, how? And if not, how do I add QuickTime to the list of allowed applications if the add/remove button is missing? (Please note: Quicktime regain access to camera and mic… - Apple Community assumes that this button exists and does not fix the issue - specifically, step 4 does not apply, because QuickTime is missing from the list.)

How do I modify/change the options in a right click drop down menu for Quick Time? I right hand click a meeting I just screen recorded on a Mac mini. The icon appears on the desktop. can I modify the menu to remove "delete" as an option so I never delete another screen recording that easily again? My mouse moved a tad far and I clicked a tad fast. On the wrong option!!
