Unable to edit certain playlists in Apple Music, done button is grayed out.
When I try to shift the songs around on this playlist, I can’t save anything I’ve done because the done button is inaccessible.

Restart your iPhone - Apple Support
If that doesn't help offload the app in Settings > General > iPhone Storage and download from the App Store. (Offloading retains all documents and data.)
