I am using macOS Catalina v 10.15.7 and am finally have space to update my OS - but the wheel keeps spinning when trying "checking for updates".... what options do I have to get my MacBook Pro updated?

I understand Software Update is "Checking for updates..." with no end in sight.
This is a known bug. Several workarounds have been proposed, such as restarting your Mac in "Safe Mode" and checking for updates while in that mode, and / or resetting NVRAM. Try both.
Start up from macOS Recovery

What has often worked for others is to use this Restore Method instead of CMD+r keys...
