I recently got an quote from aos_sales_quotes@email.apple.com after chatting with them and purchased and iPad. Is this email from Apple or Fake

Assuming that's the actual email, "@email.apple.com" is a legitimate email domain from Apple.
Emails can however be spoofed, make sure you check the actual sender's email in the header.
