Unable to give apps access to photos/camera

Hello,

Every time I try to use an app that requires my camera and photos, like Instagram or Snapchat, I get a message saying that the app requires access to the phone's camera/photos and to go into Settings to allow access, but when I do, there is no option of the camera/photos shown (see attached screenshots). I'm not even seeing the apps when I go through Settings > Privacy & Security > Photos or Camera.

This is the second time this is happening. The first time I thought this might be because I needed to update my iOS software, so I did, and the problem was gone. No I don't know what the problem is because all my apps are up to date, iOS is up to date, and I have cleared up 8 GB of storage on my phone. I'm using an iPhone 12 Pro.

Not sure what else to do, and part of my job requires my phone and Instagram. Any help is appreciated.

Snapchat --> Open Snapchat > Tap your Profile (Top LHS) > Tap Cogged Wheel (Settings) > Tap Memories > Import Snaps from Camera Roll [Allow]

Instagram --> Open Instagram > Tap your Profile (Bottom RHS) > Tap three bars (Hamburger icon) > Tap Cogged Wheel (Settings) > Privacy > Story > Save To Camera Roll [Enable]

Delete the apps and reinstall them
