I would like to change my battery because it's not in a very good condition. But the thing is I live in Africa and I'm soon going to Europe for a quick trip so I wanted to know how long does it take to change the battery in an Apple Store ?

It depends on how busy the store might be at the time.
If you have an appointment at the store......AND.....the store has the replacement battery in stock, you could expect service to take 1-2 hours.
If the store does not have the replacement battery in stock, it might take 2-3 days to complete the service.
