I've just updated to Version 16.0 (3731.700.6) of Mail, and it seems that it has been made much harder to access the sidebar. I now have to go to the 'View' option in the menu bar to make it appear/disappear. Is there any easier workaround that I'm missing?

I am not sure I understand. Are you in the habit of keeping the Sidebar hidden?
I always keep the Sidebar open in Mail, but if you want to hide/unhide it, there is a shortcut for that: Command-Control-S. Are you saying that the shortcut is not working?
What do you see next to Hide (or Show) Sidebar in the menu?

There is an almost invisible downwards arrow, that Will Only when you Mouse Over
