With elimination of iTunes store, we are forced into AppleTV app for the store. And it does not have the “latest tv episodes” feature. This was the most useful feature and helped me find currently running shows to watch. I hope Apple brings it back. Do others not use that feature?

The way to keep track of episode watch progress in the Apple TV app, is the have the show added to ‘Up Next’. This would be automatic from watching any chosen episode in the Apple TV app. ‘Up Next’ would show a (horizontally scrollable) row of content on the ‘Home’ page of the Apple TV app, with one tile per show or movie.
That only works for series I am already watching. It does not help me find new ones.
