Text Menu in Pages ap

When I open a blank document in Pages on my IPAD Air, the top “text menu” does not show up. How can I get it to appear?

Disappearing paragraphs I’ve been using the magic keypad on an iPad pro 12.9 When I’m typing, if I lift my hands off the keyboard and touch the screen where I’ve typed (to try and select a word) the WHOLE PARAGRAPH disappears. It’s BRUTAL because I’m usually writing a subjective for one of my notes from my job and the entire thing disappears, and I have to retype the whole thing. Why if I stop typing, and touch my screen does all of my content disappear? I have tried restarting, I have tried closing all other apps. I hope you can help me find a solution.

The text menu should be under the brush icon. If it's not showing close the app and force restart:
