Once you delete the call from your iPhone, it's gone. You can contact your carrier to get your recent calls and in many cases, carriers let you view your call log from your account on their website.

Log into your account on your carrier's website and see if they offer a list of recently made and received calls. Most will give you the last 3-6 months at least.
