I want to use an old iPhone 12 pro for music only. I don't any pictures, messages, pics, mail, apps (other than what comes with it) or other data on it. How can this be done? If possible a step by step process please.

IF purchased music sign into your itunes account and re-download the songs.
if non purchased sync to itunes Sync your device using your computer - Apple Support
just download some apps to gain some data in your device
Thanks. Now a follow up question. It is asking me to sign in with icloud. If I do use my apple id will it load up the iPhone with what I have on the cloud?
That's a great question. yes, using the same Apple ID will load all your past data into this iPhone 12.
