can the iPod classic be used with a modern MacBook that runs on MacOS Sonoma?

macOS Sonoma doesn’t have iTunes so how do I connect an iPod classic with a m1 MacBook Air?

I'm running a Studio but it should be basically the same. The iPods don't use Music - or iTunes - or whatever it is. They changed it so you have to use Finder. With the iPod connected to a usb port on your Mac, open a finder window, then open the sidebar (cmd+opt+s or "show sidebar" in the finder "view' menu). Once there, click on your iPod. The main window (right pane) should show you all the stuff you used to see in iTunes, including the "sync" button on the bottom right.
