How can you change email settings in Mac email to unicode UTF-8

Having issues with sending emails from privateemail and being requested to change format of emails to plaint text, then to UTF-8. However, there is no option for that. Any suggestions?

iMac 27″, macOS 10.14

Are you using Apple's Mail app?

It normally only sends plain text and UTF-8 is the standard encoding (no way to change it as far as I know).

So you need to provide more info about what exactly is not working when you try to send emails. Post a screenshot if possible.
