Freestyle senor will not work on I phone with os over 18 Freestyle help desk just told me they only have app compatible with os 18.1. They were not aware iPhone had 18.3.2 which is on iPhone 16. They suggested I turn off my updates. What do I do?

When you read the write up by App developer on these app, none of these apps show compatibility with the iOS Health App.

At the same time the Blood Glucose Section in the Health shows few Apps and Freestyle Libre is not one of them.

Probably you are using third-party apps and/or a third-party device.

No, if Abbott said it's not compatible, then it's not compatible. No one in this user to user forum or at Apple can change that.
