My iPhone was stolen about a year and a half ago, I turned on lost mode but the phone has been offline the whole time. The passcode to my phone was my birthday and I've realized that the thief could've potentially got into my phone. There has been nothing that points towards it but its just a thought I have sometimes. Could the thief have gotten into my phone?

Not correct. The phone could be powered on but not connected to the Internet....which would display as Offline in Find My.....so the thief could certainly try to get into the phone that way.

Only if they guessed your passcode.
A thief would have to be able to guess your correct passcode in less than 10 tries before they were completely locked out.
