I accidentally deleted sheets in a shared document. I didn’t know how to undo and exited the sheet to restore an older version to reclaim my data
but when I select the file from what I am assuming is the manager window, there is no icon or option for the document history
I do not own any other device other than my iPhone

Since it has been shared it should be in iCloud.
Try signing into iCloud.com in a browser. Go to Numbers for iCloud, open the document, click the three circled dots icon the top, and select Browse all Versions.
If you're lucky, you will see a list of previous versions. Look through those until you find one that still has the deleted sheets.
Open it, go to the three circled dots again, and choose Download a Copy.
