Edit Control Center IPhone 12 Pro Max
My iPhone 12 Pro Max doesn’t give me the option to edit control center or the ping my watch option

You can edit the control center in Setting -> Control Center to add or remove functions.
If you want to ping your Apple Watch in control center, it is only supported with iOS 17. You should check if your iPhone meets the requirement.
You can also ping Apple Watch in FindMy -> Devices, select your Watch, click "Play Sound".
