MacBook Dark Mode-Light Mode Customization

Have a MacBook Air M1 and I love the dark mode as I my eyes are highly sensitive to bright lights. However, I do not want the dark mode version of the Mail App. How can I customize the Dark Mode & Light Mode to only function to certain apps I want? Is there a Siri Shortcut that I can use to automatically change my MacBook to Light Mode when the Mail app is opened and switching back to Dark Mode when this app gets minimized? My MacBook Air is currently on macOS Sonoma 14.3.
